With a jailbroken iPhone, you can download and install the Desktop/Background SMS application from Cydia. Cydia allows you to change the background image of the Messages application.

Cydia is a package manager mobile app for iOS that enables a user to find and install software packages on jailbroken iPhones, iPads and iPods. You can use any of these jailbreak tools or programs to install Cydia automatically during the jailbreak process: P0sixspwn, Evasi0n, Absinthe, Redsn0w, Seas0npass, or JailbreakMe.
